ik sawal aksar zehn mai rahta hai koe explain kar sakta hai..jub hum routiya banaty hain tu kis atty ke bahtar banti hain.. means sirf ata baghair chnna howa, chnna howa atta ya phir atta + maida..

rouTy ... kaii qism ki hoti hai ... aik ko naan kahtay haiN jo amooman tandoor maiN pakayee jaati hai aur kafi moTy hoti hai ... doosray ko chapati kahtay haiN jo amooman ulTay taway /kaRha.yee par banti hai aur bahoot patli /narm hoti hai ... issi tarah baaz log rotiyaaN seedhay taway par banatay haiN... issay laazman belan ki madad say yaksaan moTayee aur bilkul gol gol bail kar pakayee jati hai.

naan waali roTy aik maratabh tandoor ki wall par chipka dee jati hai jo aag k sholay ki tapish say pakti hai ... ultay tawaay / kaRhayee waaali roTy bilkul bareek bail kar intehayee taiz aanch par garm shudah taway par jaldi jaldi 2 maratabha palaT kar banayee jaati hai.... jabkay teesri qism ki roTy darmayanay aaNch par taway par 3 baar paLty jaati hai. aik maratabah, aik side par halki paka / saiNk kar palaT dee jati hai ... doosri taraf bhi halaki saiNktay hi phir pahli wali side ko dovarah saiNkaa jata hai. iss maratabah kissi kapRay say roTy ko halka halka press bhi kia jata hai har taraf yaksaaN pressure say roTy ko taway par ghomatay howay.... iss amal say roTy Phool jati hai aur roTy k 2 wazah parat ... aik patli aur aik moTy ban jati hai.

teenouN tareeqah ki roTy k liyeh aaTay alag alag tareeqay say goonday jatay haiN... aap kissi qism ki roTy ki baat kar rahi haiN

lakin chapati or aam theesri kisam ke jo routiya hoti hain kiya inkai liyai alug tareeqy sy atty goonday jaty hain..yai muje ilm neihi tha .. or in kai liyai atta konsa best hota hai maidy kai sath mix ya aam chana atta...

kiya chnna atta healthy hai ya baighair chnna ..?

1. aattaa to beghair chanaa hi healthy hota hai ... aur agar aaTTa flour mill ki bajayee 'chakki' walaa ho to mazeed healthy hota hai coz mill maiN wheat k bahoot say ajzaa burn hojatay haiN... chakki waalaa aaTTa bhi market maiN aam milta hai, thoRa costly hota hai............. by day way sab say behtareen aaTTa to woh hota hai jissay apnay ghar maiN haath waali chakki say pisaa jaaye. E21.gif yeh gharelu chakki ab to maadoom hoti jaarahii hai ... taham barrasagheer k bahoot say gaaouN dehaat maiN stilla available hai.... issay peesna aik tarah ki behtareen warzish bhi hai aur iska aaTTa healthy bhi... ind o pak k jailou\N maiN qaidiyouN say aksar yehi kaam lia jataa thaa baqaulay hasrat mohaani (in jail):

2. maiday ki roTiyaaN ghar maiN as a routine nahi pakani khani chhaiyeh. yeh stomach k liyeh nuqsaan dah hota hai. albatta iski pooriyaaN aur deger nimko like samosay, paraThay, etc achchay bantay haiN dekhnay maiN bhi achchay lagtay haiN lehaza kabhi kabhar / taqareeb etc k moqay par maida use kia jasakta hai.

3. naan maiN meeTha soDa /baking powder / sodium bicarbonate (aik hi cheez k teen naam) achcha khasa Dala hota hai... yehi wajah hai k bazaari naan regular khaanay say stomach prob bhi hota hai aur blood pressure bhi baRhta hai... aik to salt (sodium chloride) ki wajah say aur doosray sodium bicarbonate ki wajah say k sodium say BP baRhta hai.

4. bareek chapati (ultay taway /kaRhayee wali) bhi koi sehat bakhsh roTy nahi. kabhi kabhar use karnay maiN koi mozaiqah nahi.... behtareen roTy beghair chanay chakki walay aaTay ki moTy roTy jo belan say yaksaaN bail kar taway par low heat maiN saiNk kar ... pholaa kar ... pakayee jaye woh bahoot behtar aur umdah hai. iss maiN namak bhi kam Dalta hai aur wheat k Ghazayee ajzaa bhi jaltay nahi ... agar RoTy jal nah jaye to ... RoTy nah to kachchi honi chhahiyeh nah hi zeyadah brown spots wali jali howee.

5. agar aaTTaa itminaan say slow slow thoRa thoRa water Daal kar goondha jaye iss tarah k aaTTay say white doodh nikalnay lagay aur bartan ka poora aaTTaa aik golay maiN tabdeel hojaye ... nah to aaTTa bartamn maiN laga rah jaaye nah haathouN maiN (its an art) aur aaTTay ko goondh kar ghanta 2 Ghantah baad roTy pakayee jaye to it will be a ideal healthy roTy for all of us........ r u ready to do all these exercise to make ur family healthy
