Carrot Kheer
Cooking Time: 25-30 minutes
Serves 2-3
Ingredients:
Carrots: 4 Large Carrots
Sugar: 1 - 2 Cups
Cardamom powder: 1 tbsp
Whole Milk: 2 Cups Can be substituted with Fat-free milk
Saffron: 2 to 3 strands
Ghee: 2 tbsp
Garnish: Pistachios and Almonds Optional
Method:
1-Boil carrots until they are soft .
2-Grind the boiled carrots along with cardamom powder to a smooth paste
3-Heat 2 tbsp of ghee in a vessel. Add the carrot paste and cook the paste until the raw smell disappears.
4-Next add sugar and cook the carrots for 2 to 3 minutes.
5-Finally , add milk and saffron and allow it to boil for 15 to 20 minutes.
6-Garnish with pistachios and almonds.
7-Serve it hot or cold as u like .

Cashew Almond Ice cream
Cooking time: 25 Minutes
Ingredients :
milk - 1 liter,
sugar - 6 tsp,
cashews - 25g,
almonds - 10,
essence - vanilla or pista - 2 drops
Method :
1-Boil milk and cook in low heat until its amount is reduced to one half. Soak almonds in water for one hour.
2-Peel the skin. Mix cashews and almonds and grind into a nice paste.
3-In a dry pan, heat the cashew-almond paste for 5 minutes or until the raw smell disappears.
4-You may add water in small quantities to ensure that the paste does not stick to the pan.
5-Add this paste to the milk and mix well. Add the essence.
6-Keep it in a covered vessel inside the freezer.
7-After one hour, remove the ice cream and grind well once again. Then freeze it.

French Toast
Cooking time : 15 minutes
Serves 2
Ingredients:
4 slices of bread.
1 tablespoon butter;
1 tablespoon oil;
2 eggs;
2 tablespoons milk;
1 teaspoon vanilla extract;
½ teaspoon cinnamon powdered;
1/8 teaspoon nutmeg grated; Sugar
Method:
1-In a large bowl, mix the eggs, milk vanilla extract & nutmeg together. Use an egg beater & beat the mixture nicely. Cut each Slice of bread in half.
2-Put the bread pieces in the bowl, making sure it's covered with the mixture.
3-Add the butter and olive oil to the frying pan - when hot - Fry till golden brown on both sides. 4-Remove from pan & place on to a paper-towel this will absorb all the extra oil. Repeat procedure till all the bread pieces are made.
5-Serve sprinkling Sugar mixed with Cinnamon powder or with maple syrup.

Orange and Pineapple Delight
Cooking Time: 15 Minutes
Serves 3
Ingredients:
1 1/2 cups fresh orange segments, peeled & deseeded
1 cup fresh pineapple bits, central bone removed
1/4 cup sugar
2 cups orange juice
2 scoops vanilla icecream
few drops vanilla essence
1/4 cup plain chocolate sponge (crumbled fine)
Method:
1-Chop pineapple into fairly small pieces, and halve segments.
2-Dissolve sugar, essence in orange juice, chill well.
3-Just before serving:
4-Blend juice and 1/2 scoop icecream in mixie.
5-Pour into 3 icecream cups.
6-Add segments and bits, mix well.
7-Float 1/3 icecream on each fruit cup.
8-Sprinkle crumbled chocolate sponge.
Serve immediately.

Fat-free Rasmalai
Cooking time : As Required
Serves 6
Ingredients:
for Malai
16 oz fat free Ricotta cheese
1/2 cup sugar
1/8 tsp baking powder
1 tsp Cardamom powder
Ingredients for the Ras
1 quart evaporated skim milk
1/2 cup sugar
1 tsp cardamom powder
1 tbsp blanched almond pieces
Method:
Method for Malai
1. Pre-heat oven to 400º
2. In a shallow baking dish, mix the above ingredients well and spread evenly
3. Cover and bake at 400º for 20-40 minutes or till done
4. When cooled to room temperature, cut into several pieces (1 ½" x 1 ½" size)
Method for Ras
1. In a non-stick pot, boil the evaporated milk for about 15 minutes on low flame.
2. Add sugar, cardamom powder, almonds and stir. Cool it to room temperature.
3. Add the baked ricotta cheese pieces. Refrigerate and serve.
Note: This may also prepared with regular or low fat ricotta cheese (reduce baking time to about 20 minutes) for the malai; and half & half for the ras,

vanilla essence is like food flavouring,..jese cake mai bhi flavour ke liye use karte hain different essence..
