Kanji
A very traditional Punjabi drink made out of fresh black carrots. Due to short season of black carrots it is made during the period between December and April when black carrots are available in plenty.
Ingredients:
1 1\2 kilograms black carrots
1 tablespoon mustard seeds (rai or sarson)
1 teaspoon chili powder
- - salt, to taste
How to Cook:
1. Peel the carrots and then cut each one in half crosswise. Cut the halves into thin strips and wash them thoroughly with tap water.
2. Put the carrot strips in a large earthenware pot; add rai, chili powder, salt and about 5 liters of mineral water. Stir well and cover the pot tightly and then place it in an airing place for 3-5 days, stirring the contents once a day.
3. After 3-5 days, Kanji is ready to drink. Take out 2 jugs of Kanji to serve and at the same time add 2 jugs of water into the earthenware pot as the carrots will release more juice. Consume the whole batch within 15 - 20 days.
